Chef Diana Kochilas from the TV series My Greek Table visited our farm in Santorini, and together we collected capers at the caldera.
The Chef Dimitris Skarmoutsos visited us at Nomikos Estate. He spoke with us and documented both the traditional process and the current method we follow to process Santorini Fava.
The traditional threshing procedure was a labor-intensive process involving both people and animals. After harvesting, the dried fava plants were brought to our threshing floor at Nomikos Estate, Santorini, where we demonstrated the method that was used until recently.
